A Day in the Raw Food Kitchen


Earlier today I talked about how I was spending the day in the kitchen and whipping up some yummy raw food treats. I know you’re curious as to what I made, so let me share a few pictures from my culinary adventure.

My ultimate goal today was to make delicious dinner for Justin and myself, and try to make some other foods that we can eat for the rest of the weekend.

I was inspired by the Meyer Lemon Salad in Raw Food Real World, but I didn’t have pears so this particular salad is not an official entry into the Raw Food Massive Recipe Book Challenge. Instead of a pear, I used a crisp apple. And I used a spring mix salad blend instead of the greens used in the official recipe. The dressing from the Meyer Lemon Salad was exact.

Verdict? This was an awesome salad!

The dressing was amazingly delicious, filled with a sweet and tangy lemon flavor, with an undertone of olive oil flavor. The greens were fresh, and the apple was sweet and crisp. What a great fall salad! I’ll definitely make the “official” salad! What can be better than a great salad? Some raw pasta!

Again, I didn’t follow any recipe exactly, but made up my own pasta with two sauces; one pesto sauce, and one sun dried tomato sauce atop a bed of zucchini noodles. The pesto sauce was amazing, as I filled the sauce with fresh basil, and even some fresh dandelion leaves. It tasted better than any pesto I’ve ever had. Fresh greens with a zing of pine nut nutty goodness, and a bit of garlic to give it some kick.

I based my sun dried tomato sauce from the tomato sauce in the lasagna recipe in Raw Food Real World. It would have been the exact recipe, but I didn’t have onions. Otherwise the sauce was really close to the book. The sun dried tomato sauce was incredible. Full bodied sun dried tomato flavor. I kept nibbling on bits of it while making it. I wanted to dig in and have some right then and there!

As for the noodles, no matter what I did, they were still a little too moist. I used the Spirooli spiralizer, but it just doesn’t give me the noodle consistency that I want. It was still yummy, and edible, but the noodles were the one thing that kept this dish from being a perfect 10.

I want noodles like I’ve seen in Matt Amsden’s RAWvolution! What is his secret! I want to know! I also made some other dishes, but we didn’t eat my other creations yet, so after we eat my other goodies, you’ll see it here on the blog.

I’m in the mood for dessert, but it’s too late.
I guess I’ll have to eat a raw coconut pie in my dreams!
