I am loving this salad at the moment. The watercress is looking so lively and vibrant in the creeks where I live. Make sure you collect it from somewhere that is not getting sprayed with chemicals.. Watercress is sooo good for you, and very satisfying to collect it wild.
Beet And Watercress Salad
With
Sweet Miso Dressing
Dressing:
1 Tablespoon chickpea miso paste or sweet light miso paste
1 Tablespoon Balsamic vinegar
2 Tablespoons Basic Nut Milk
1/4 cup flax or olive oil
Blend together
Salad
6 cups chopped, packed watercress
1/2 cup thinly sliced red onion
2 avocados, sliced
1 small beet, spiralized or julienned
2 teaspoons black sesame seeds
Toss and serve

Green Juice Of The Moment:
2-3 stalks of organic celery
1/2 head brocolli
2 large siverbeet leaves
3-4 large kale leaves
2 lemons
3 apples
2-3 carrots, or less if you want a clearer, nicer green colour
Put all through the juicer.. you need a single gear juicer to juice brocolli and kale. If you don’t have a single gear juicer, just leave out the broccolli
