I can remember a few years ago when they got a bad health rap.
Nutritionally, one egg is approximately 65 calories.
It supplies Vitamin B2, Vitamin B12, Vitamin B5, and Vitamin D.
It also supplies protein, tryptophan, selenium, iodine, molybdenum and phosphorus.

Eggs Health Benefits
One egg provides eleven percent (5.5 grams) of the required daily intake of protein at an affordable price.
One yoke supplies 300 mcg of choline which is a key component of acetylcholine. This is a chemical in the brain that boosts your memory.
Choline is one of the B Vitamins that assists in converting homocysteine, a molecule that damages blood vessels, into other benign substances. This reduces the risk of cardiovascular disease.
The antioxidant, lutein, is more readily absorbed by your body because of the fats in yolks. Lutein prevents free radical damage to the retina by stopping inflammation of the macular pigment. This part of the eye protects the retina from damage caused by lights and it improves your vision.
Peptides, protein found in egg whites, binds to infectious causing E. coli. This prevents bacteria from sticking to the urinary tract wall and prevents urinary tract infections.
A Healthy Recipe – Breakfast Quiche
- 4 eggs
- 2 tablespoons chives
- 1/2 tablespoon garlic powder
- 1/2 cup fresh mushrooms
- 1/4 cup green pepper, diced
- 1/4 cup scallions, diced
- 1 cup shredded cheese, your favorite
- 1 1/2 cups milk
- 3 tablespoons flour (I use wheat flour)
- pepper and salt to taste
- **15 slices crumbled turkey bacon
** If you’re vegetarian, this is excellent without the bacon.
- Whisk the eggs
- Add all the vegetables and flour and stir gently
- Add the remaining ingredients and fold in gently
- Bake at 350 degrees for 35 to 45 minutes. It’s ready when a toothpick inserted into the center comes out clean.
If you like a crust, you can use an already made pie crust. (I do not have a good recipe for pie crusts and I can’t make one, so I buy mine!)
You can also use biscuit mix and press into the bottom of a pie plate, this makes an excellent breakfast dish.
You can also use a croissant mix and press into the bottom of a pie plate for something different and also very good.
